A Classic Rice Krispy Recipe:

This past 4th of July, I was tasked with bringing a dessert to a party two hours away.
I didn’t want to buy something that could get messed up or melt on the long drive over. And not being too familiar with the area where the party was being held, I couldn’t really depend on finding a grocery store nearby.
So I decided to go old school and make my own Rice Krispy Treats.
And I am so glad I did because they were super popular!
….With the adults because we hid them from the kids.
We did grow up on them first to be fair.
Anyway, back to making these Rice Krispy Treats.
Turns out, when you look online, there are so many basic or overly complicated written recipes.
So I’ll help make this simple.
Here is what you need
- 5 and 1/2 cups Rice Krispy Cereal
- Two 10 oz bags of Mini Marshmallows (we won’t use the full second bag but you’ll need it, to add a little more and possibly snack on)
- 3 Tablespoons Butter
- 1 Teaspoon Pure Vanilla Extract
Helpful Tips
-Prep the pan you are going to put Rice Krispie mixure in by either buttering the pan or parchment paper so it does not stick. I personally like to use parchment paper because there is no cleanup.
-The Rice Krispy Cereal knock off brand from Target is just as good as the real thing
-Jet Puffed mini marshmallows are usually cheaper at Target than Save Mart.
-It is best to use higher quality butter because it has less water content compared to lower quality brands; which makes it improved in flavor and gives the Rice Krispies better structure.
-This recipe takes about 30 minutes to make, so plan accordingly.
How to make those rice Krispy treats over the top
- Melt 3 tablespoons butter on low heat.
- After the butter is completely melted, add one 10oz bag of mini marshmallows and stir until melted like shown above.
- Add 1 teaspoon pure vanilla extract to the melted marshmallows and stir in quickly. Remove from heat.
- Add the first 4 cups of Rice Krispies to the melted marshmallows and stir in until coated. Then slowly add the remaining Rice Krispies till you get your desired marshmallowy-ness?
- Grab a partial handful of marshmallows to sprinkle in from the second bag and stir in. (These marshmallows do not need to melt in.)
- In your prepared pan, add a handful of marshmallows before adding the Rice Krispie mix into the pan.
- Put the Rice Krispie mix into the pan and press down to fit the pan using parchment paper.
- After it is all pressed in, add one more handful of marshmallows to the top and press them in.
